Ingredients:
1 Cup Mayonnaise
1.5 Cups Sour Cream
2 Small Cans Green Chilli
1 Roasted Chicken or 6-8 Chicken Breasts (Boiled)
1-1.5 Cups Pepperjack Cheese
1-1.5 Cups Colby-Jack Cheese
1 Large White Onion
1/4 Tablespoon Cumin
Salt
1.Start by chopping your onion into large square portions. Turn your stove on medium heat and melt a quarter stick of butter into the pan.
2. Add your onions to the pan and mix them thoroughly into the butter. While you are doing this start shredding your chicken and place it into a large mixing bowl.
3. Add your green chile, mayo, and sour cream onto the chicken. On the mayo and sour cream add your cumin.
4. When your onions start to brown turn to low and add a light sprinkle of salt across them, stir thoroughly and let them simmer. This will help them carmelize.
5. Shred your Pepperjack Cheese and add it onto your mixture as well.
6. Add your now carmelized onions on top of the mixture, the heat from the onions will help make stirring the ingredients together easier.
7. Take a baking pan and coat it with Pam or some other type of non stick spray. Taste your mixture, everything in it is already cooked before you bake it so it's safe to taste and add more salt or pepper or cumin to your liking.
8. Distribute your mixture evenly across the pan and shred your Colby Jack cheese to finish the top layer.
9. Your casserole is ready to be stored or cooked now. It can be frozen at this point or stored in the fridge for sooner use. When cooking preheat the oven to 350° and bake for roughly 40 minutes. If you would like the Co-Jack cheese layer to have more of a crisp texture turn the oven heat up to 400° for the last 10 minutes of the 40 minute cycle.
This casserole isn't hot at all so if you would like to add some heat to the mixture some fresh chopped jalapeno's, black pepper, and a touch of cayenne pepper will do the trick.
The total carb count for this meal should be below 30 grams for the entire casserole, seeing as it is made up of fat heavy ingredients it is definitely filling and can last a few days or definitely stand in as a family sized meal, it is also energy dense so you won't be looking for snacks anytime soon after this bad boy. You will be surprised at how a smaller serving of this casserole can satisfy your appetite!
